No-Carb/Super-Low-Carb Sweets/Desserts (Homemade)

Hi!

I'm going nuts for something sweet and/or creamy. I thought that peanut butter was to be my solution - but I was surprised to find that even the all-natural, all-peanut peanut butter is relatively high in carbs per serving.

I was even more surprised when I found that ricotta cheese is really high in carbs too! I expected it wouldn't be, as I've bought quite a few (hard) cheeses that were listed as having no carbs at all.

So far my only leads for something new are stevia (as a sweetener to replace all sugar) and evaporated milk, which has much less carbs than does normal milk or even heavy cream.

What can I do with those two things - or in general?

What about getting some gelatin and making some xylitol mousse? It's creamy and lowish on the carbs. You could also use some kind of artificial sweetener.

Like I mentioned in my answer to your questions on ketosis, your first goal if you decide to do a very low carb diet is to establish ketosis and concurrently break your addiction to sugar and carbohydrates (ie two weeks 20 grams of carbs or less and eat only meat, eggs, cheese, oils and leafy green or low starch vegetables)..... then after two weeks you can add back in some carbs with nutritional value like nuts, berries other vegetables etc.... Looking for substitutes for high carb items (desserts, pasta etc) is the wrong way to approach it. I personally will have a low carb dessert every now and again but my "treats" come in the form of berries, kefir and nuts. Seriously giving your body too much of the fake carb substitutes makes me at least crave the real stuff.
