Healthy Ice Cream

It is possible to make healthy ice cream. It just takes some work

That kind is dairy-free... though it does use egg yolk so it isn't vegan:

Dairy-Free Chocolate Ice Cream

Makes five or six rich scoops

Ingredients:
2 ounces 85% cacao chocolate, chopped (I used Lindt)
9 tablespoons erythritol or 7 tablespoons xylitol
1/4 teaspoon good-tasting pure stevia extract
2 cups full fat coconut milk (preferably Thai Kitchen brand)
3 tablespoons coconut oil
1 tablespoon pure vanilla extract
2-3 tablespoons rum or vodka (to keep ice cream soft and scoopable)
Pinch unrefined sea salt
1 fresh organic egg yolk
1/4 cup chopped walnuts (optional)
1 recipe ice cream chips (see below)


I'm sure vegan versions are possible. With that in mind, I was wondering what other recipes would be good. An ice cream maker machine might be a bit more convenient, if you can find high quality ingredients to add into it, though not having to buy one would be even better. I am not a paleo dieter and wouldn't go overboard on the saturated fat, but perhaps there are ways to keep it reasonable. Certain high quality, organic fats might be better than others for ice cream. Coconut might work fine, and I'll definitely try it. Perhaps it is possible to find even better saturated fats low in palmitic acid that would work well for ice cream. Any ideas?

Of course portion control also plays into it.

Too bad you can't just by a Stevia sweetened full fat ice cream. All the ones I've found say sweetened with splenda, but in fact are also loaded with sugar alcohols (and are reduced fat).

Xylitol is a sugar alcohol, but it seems to be beneficial for your teeth... and since I don't get any sugar alcohols in my diet, I wouldn't have a problem with it.
