Use of a slower cooker okay?

Just curious what you all think of slow cookers.  I've been using one a big for some lentil/bean/sweet potato dishes, loaded with tonnes of cruciferous veggies, allium family veggies, mushrooms, and tomato products.  

 

It seems whatever the culinary angle I take, the outcome is good.  Cooking time is often 6-8 hours.  Do I have to worry about AGE's being produced?  Perhaps it raises the GI of food too much, since it tends to be very cooked, rather than el dente?
