There are a lot of DIY toothpaste recipes out there, but I have yet to see something like a DIY tooth gel.

There are quite a few ingredients out there that are touted for helping w/ tooth re-mineralization.

Was curious if anyone had the idea or has attempted to create their own tooth gel. Something you would apply onto a tray (like the whitening trays) and leave on, until whenever.

If I were designing this sort of gel, I would probably base it around charcoal, xylitol, baking soda, fish oil, and CoQ10.

I am not sure it is worth it, though. At the moment, I coat my teeth with a good toothpaste at bedtime and let it dissolve away at its own rate (no swilling or rinsing). The reason I do not think it is worth it is that the idea is to get the saliva to a healthy pH, in my opinion: once that is done, the saliva itself will then look after the teeth, which includes remineralising them.

I do not think we can get white teeth by this or any other method. The best we can do is restore them to a clean ivory, which is their correct colour. Unfortunately, this may seem yellower as we age, because the enamel thins, allowing the colour of the dentin to show through more.

Thanks for the input. Reason I ask is I was looking into doing something like adding papain to a tray mixed w/ something else as well. As it's said to dissolve proteins.
Was thinking this would target plaque/tartar.

Such a gel would certainly remove plaque, but so would toothbrushing. Tartar is slightly different, because it can be quite solid. In my experience, good oral care over time will dissolve or loosen tartar, so that it diminishes and can also be scraped off. Again, I believe healthy saliva will do the groundwork. I think that is far more significant than surface application of substances. Giving up refined food and sugar produced the miracle for me. Maybe the best way to prevent plaque and tartar is to deny them the substances they are made from.
