Hey guys,

 

I'm trying to cut down on my AGEs which is proven to be quite difficult as I eat a lot of protein and olive oil. I'm gonna start slow-cooking my chicken, but anyway, I had a few questions I haven't found any answers to which I was hoping someone here perhaps could answer. 

 

1. Whey protein powder. Is it likely that this contains a high amount of AGEs?

 

2. I eat about 400g chicken per day. Even if slow-cook that's 4000 units of AGEs. Is there any better protein that I could eat which is still of high quality? 

 

3. What spices inhibits AGE formation? Do these have to be taken with the meal to be effective? In other words, should I makt it a habit to spice all my meals? What about dosing?

 

4. Olive-oil is already high in AGEs, but I like baking with it so I eat about 35g - 50g per day. My question is, do more AGEs form when the oil is heated up? I never heat higher than 150 degree celcius and try to keep it at 100. 

 

I'd really appreciate if anyone is knowledgeable in this area and we could have a discussion going.

Yeah, I read about the lemon/vinegar thing, but that would be terrible for the teeth I reckon.

Wikipedia mentions this, about the possibility that dietary AGEs may not have much effect on AGEs in the body :

Animal-derived foods that are high in fat and protein are generally AGE-rich and are prone to further AGE formation during cooking.[3] However, only low molecular weight AGEs are absorbed through diet, and vegetarians have been found to have higher concentrations of overall AGEs compared to non-vegetarians.[4] Therefore, it is unclear whether dietary AGEs contribute to disease and aging, or whether only endogenous AGEs (those produced in the body) matter.[5] This does not free diet from potentially negatively influencing AGE, but potentially implies that dietary AGE may deserve less attention than other aspects of diet that lead to elevated blood sugar levels and formation of AGEs.[4][5]

Would infusing olive oil with herbs help lower AGEs?

Any idea if that would work?

 

Would there be any risk of bacteria proliferating? Perhaps it'd be better to prepare a small quantity at a time.

 

Or perhaps garlic olive oil would have less AGEs?

 

Concerning whey, it contains AGEs also, what could work? Perhaps preparing the a daily amount the day before by adding spices.
