Sweet potatoes

I have found sweet potatoes to be a great staple for my diet but I'm concerned about possible vitamin A and oxalate overdose from eating everyday. Seems to be lots of conflicting information out there. Any ideas here? #sweetpotato

Wanted to make a thread about sweet potatoes too as I eat 2.4 kg every day so I'll hijack this a bit while answering you.

 

Regarding oxalates, I eat a lot of calcium (1600 mg) to make up for this and also drink a lot of water in order to urinate a lot. As far as I understand, this would be enough for oxalates not to be a concern. By my calculations, I get 350mg of oxalates per day.

 

My concern with sweet potatoes, however, is the high glycemic index. What's the verdict on this? My sweet potato meals are always 800g - 1kg and I eat them with some chicken and 40 grams of olive oil. I slow cook my potatoes. Would it be better for the GI if I boiled them? 

 

Right now, with my current diet, if I were to remove sweet potatoes I would not get enough of:

 

Biotin
Vitamin b2

Copper

Iron

Magnesium

Mangan

Zink

 

Is there anything I could swap out sweet potatoes with to easily cover this?

I would also like to know more about this. 

 

I usually tend to eat about 3 pounds a day, sometimes more and sometimes less.

 

I am not concerned about the beta-carotene because I mostly consume the white fleshed sweet potatoes. 

 

I do have concerns over their high oxalate content, because I also have a very low calcium intake. I don't notice any obvious symptoms but I do sometimes get an excessively dry mouth, and muscle cramps.

 

The Kitivans and Okiniwans tend to eat large amounts without any apparent issues to my knowledge.
