I have a 2Core PC, that I do not use, a laptop with a working processor, tablet, modern 2core smart phone, another old, but working Windows Mobile 400 Mhz Pocket PC. I am not using even the half of all this processing power currently. Lets suggest, that with a propper software the combined processor power will be enough.
What sensor do you suggest for making the scan images?

Lasers (exterior), ultrasound, everything from the electromagnetic spectrum that doesnt hurt you.

Alright, so far the ultrasound may help. It will ned an ultrasound emitter and an ultrasound sensor. They will have to be able to be plugged into an usb interface and send at least the raw image information, which to be processed further... May happen... But I can't construct the ultrasound emitter and mainly the sensor.

I didnt want to be too unprecise, but just to explain that the price of these things has fallen dramatically, especially since they massproduce such sensors for Platforms like arduino, computer perypherie of all kinds etc.
Many things are already available as (more or less) plug-and play-device.
