This discussion holds for stuff like kidney, pinto, navy and black beans as well as red lentils.  So the pinto bean salad starts off in your stomach.  Not doing much good there, if anything it's giving you heartburn.

 

Slowly it makes its way into the blood vessels, the phytochemicals begin to regulate blood glucose, the magnesium and folate relaxe your heart and the contractile artery walls are made more elastic; a pure, nearly ketogenic fuel is burned.  Eaten in a 2:1 ratio with beans to rice, it rapidly cures diabetes.  But that's more aggressive than needed. When sustained for 6-12 months a 1/2 cup can alleviate age related cognitive decline and enlarge grey and white matter regions.

 

The role of legumes in the Mediterranean diet and their benefits are not to be underestimated.  These benefits likely stem from organelles as small as the mitochondria.  Interestingly, many of these oligosaccharides and antioxidants accumulate in the lung and brain.  Lung cancer is one of the most common types of cancer, even in rural, non-smoking demographics.  but with good diet its risk can be largely offset

 

Furthermore, we found a positive association between a high legumes pattern and the improved MMSE (Mini Mental State Examination) after an interval of 1 year, and an inverse association with basal and 1 year ADAS-cog test (Alzheimer’s Disease Assessment Scale-Cognitive sub-scale). Finally, we found that a dietary pattern that includes plant proteins and polyunsaturated fats is independently associated with an improvement on ADAS-cog after 1 year.

 

... To our knowledge, this is the first time that an association of both the legumes and plant proteins with the cognitive performance has been found in elderly individuals using PCA to obtain food and nutrient patterns. Additional studies are required to assess if the change in the ADAS-cog test obtained in this population after one year would result in a reduced AD risk.

 

It might be a combination of antioxidant, cardiovascular and nutritive qualities which give the dark pigmented beans their unique combination of effects
