How does AMPK respond to glucose?

In the below video, David Sinclair mentions that AMPK responds to low energy and lack of sugar. I've also heard him many times recommend a diet of fasting, low calorie intake and avoiding sugar.

 

Is it solely sugar that is bad though? Isn't the problem glucose levels rising, which would mean that foods other than sugar that increase glucose levels would also be bad? 

 

Thus, this would then mean that stevia, which doesn't increase glucose levels would be a great alternative to sugar?
