You need to realize that an allergy and sensitivity/intolerance are two different things. Blood testing will identify your celiac disease symptoms and it could also confirm if you have Celiac Disease.

Going gluten free can cause you to have less of certain nutrients that you have to make sure you get some other way in quantifiable amounts

If you have the genes for celiac then you have celiac regardless if you feel the symptoms or not. You're still being affected and there will be improvements going celiac free even if it might not be noticeable. A celiac blood test in severe situations can be futile because they test for a certain protein and being celiac you are deficient in proteins so you will have low levels of it due to being protein deficient. And people with celiac have better genetics and mentality because they manage to overcome the nutrient deficiencies and all the weak ones died.

celiac is not rare but in combination with other gut diseases it is which can cause devastating effects. Gluten is the least nutrisious foods
