Soaking raw walnuts

Do you think it's prudent to soak raw walnuts? How much of a concern is the phytic acid? I tried soaking a batch last night and they taste pretty terrible afterward.

Oh yes, soaking nuts makes them disgusting. You could try processing them into a paste afterward and making some sort of snack out of them (like this).

Personally, I think you shouldn't be consuming so many nuts that the phytic acid becomes harmful. There is evidence that small amounts of phytic acid may be beneficial.

if you want to eat them whole, you will need to salt & dehydrate them for them to taste good. i usually process them into pate's of one form of another.

i almost never eat unsoaked nuts, soaking makes them vastly more digestible for me.

i like soaked walnuts more but after soaking them, i let them dry and then roast them with some sea salt in the oven or saute them with apples in butter.

soaked walnuts - still wet- must be terrible at taste, I'm sure.

i like soaked walnuts more but after soaking them, i let them dry and then roast them with some sea salt in the oven or saute them with apples in butter.

Wet walnuts!! Sounds dreadful!

After soaking them over night I dry mine out (sometimes with some kosher salt) in the oven at under 145 degrees F. That way they become crunchy again, but it doesn't destroy the enzymes that help with digestion. Walnuts don't agree with me, regardless. I soak and dry pecans and almonds -- the almonds take a long time to dry out again. It's pointless to do the soaking or drying with cashews because -- according to my understanding -- they are roasted in the process of harvesting.

+ 1 on soaking walnuts then roasting them. Even better: Try putting salt in the water and a little more on top while roasting.
