Start Defrosting Turkey Now

It can take quite a while to defrost a frozen turkey. Consult the label, or the 800 number. Put something under it in case it drips.

Some ovens run hotter than they are supposed to. This can happen with old ovens when the temperature regulator wears out. If you don't use the oven for anything much, and you have an oven thermometor, check it out. You can buy one of these at a kitchen supply store or some supermarkets. Or you can just keep an eye on the turkey.

Some people have a convection oven or have their oven on the convection setting without realizing it. Convection ovens cook things in about 1/3 less time. Some apartments have free standing convection ovens that look like large toaster oven, large enough to cook some turkeys in. If you don't know if your oven is a convection oven or has a convection setting, check it out.

The most common mistake is overcooking the turkey so it is dry. Keep an eye on it.
