I know this post is old but I didn't want to create a new thread so bump.
I'm also pursuing natural nitric oxide blockers or nitric oxide synthase inhibitors. This is what I have found but Quercetin was ineffective for me and something tells me that Astaxanthin would be a weak blocker of NO.

Moreover, we evaluated flavonoid modulation of inducible nitric oxide synthase (iNOS) and cyclooxygenase-2 (COX-2) enzyme expression by western blot analysis. Apigenin and quercetin (0.5–50 μM) were the most potent inhibitors of NO production and this effect was concentration-dependent and significant at 5 and 50 μM."

Anyone know of something more effective?
