I have a somewhat complex question: is the same oxidation-prone substance more protected in the solid state than in the liquid state?
 
For example: let's say I have some ascorbic acid in solution, now this tends to oxidize in the air, but what if I freeze everything? Is it possible that the oxidation rate is lowered since the molecules have greater difficulty in coming into contact with oxygen?
 
The same with oils for example olive oil can be freeze and become solid and that can stay it away to be rancid. 
 
In this case, is it possible to create a solid emulsion of coconut oil and water soluble vitamin C and store in a solid form and protect vitamin C for a longer time?
