A lot of ECA (ephedrine caffeine aspirin) stacks will say on the bottle should not be
taken with MAO-Inhibitors. I've also heard this is standard warning and can be ignored. Is taking piracetam+choline with ephedrine safe?

This is not just standard warning. Taking ECA with an MAOI is a bad idea. Neither piracetam or choline are MAOIs, the combination is safe.

Would you say then, that taking ephedrine with deprenyl is not a good idea since deprenyl is a MAO-B
inhibitor?

Acutally in low doses it would be safe, it's when MAO-A is inhibited ephedrine can interfere. In large doses deprenyl can inhibit MAO-A.

Hm, ok, thanks

And should piracetam be taken with food or is it fine to take it on an empty stomach?

You can take it either way. It is highly bioavailable.
