Do you mean protease enyzmes that help break up the peptide bonds in amino acid/ polypeptide chains?
Enzymes are required for every cellular function and modern diets (cooked and processed foods) are often deficent in the required enzymes. I started taking bromelin (from pineapple) to help my body get rid of some nasty warts but I have also changed my diet to one largly consisting of fresh fruit and vegetables, nuts, seeds and legumes. The warts went away and never came back about 3 months into my new diet and I have lost a lot of weight ( I'm now only 55 kilos) and people now comment me on how good my skin looks. I do wear hat/ sunscreen every day though helps a lot too.
I'm not sure how you came to the conclusion that the enzymes would increase the GI index of foods though but I'm open to hear your reasoning.
