It seems that it would be a whole lot easier to put put a mirror/highly reflective coating on mortars and missles than it would be to build a laser cannon.

I dunno. I'm pretty sure that a really high energy blast will fry a mirror. Reflection off of metallic surfaces involves a simultaneous absorption/re-emission event, which is why such reflections are not polarized. Reflection off of non-metallic surfaces is more of a true reflection. A shiny non-metallic coating might work better, but I think it could still be overpowered with enough energy. Also, directed energy weapons could be outside the visible range, which might nullify such schemes.

There was an interesting news documentary by some Italian reporters that argued the U.S. has secretly been testing ground based, vehicle mounted lasers on "enemy combatants" in Iraq.
