Is there something I can mix coconut oil with to keep it liquid at room temperature? Would liquid lecithin work? Or maybe another oil? If so, how many parts to coconut oil? Same question for cocoa butter.

A tougher one, also, is there something I can add to keep coconut oil liquid in the refrigerator? I know it's one of the lesser ingredients of Udo's Choice oil, which I keep refrigerated, and the coconut oil portion never comes out of solution.

I think you are on the right track with things like other low-melting oils or even something like lecithin. You will probably have to experiment. Coconut oil, because it's saturated, should be pretty stable and probably wouldn't need refrigeration. I keep mine in a cabinet or often just sitting on the counter. Still, if you get a low-melting enough solvent, you could probably keep it in solution at a fairly low temperature. Unsaturated oils should pull the melting point down, but that would kind of blow the whole idea of using coconut oil.
