I have been reading a little bit about raw food diets because of a few threads on this forum and one thing that i have seen mentioned is the idea of soaking almonds over night. Apparently this is meant to inactivate certain enzymes which then makes the almonds more easily digested. A quick search didnt turn up much but has anyone else got any information on this? does anyone else do this?

I've done this before in making almond milk. No other reason.

You would also do it to sprout almonds. But my understanding is that all domestic almonds are now required to be pasteurized, and therefore, are dead and won't sprout. Imported, organic, unpasteurized almonds are available from Spain at around $11-14/lb.

Organic pastures has raw almonds for $10/pound (organicpastures.com), along with raw dairy.
