I frequent farmer's markets often, but was wondering how best to preserve the freshness and nutrients in my greens for the longest period of time?

I am assuming refrigeration and probably keeping them somewhat moist helps, but is there anything else one can do?

open the bag a very tiny bit to let the greens breathe while in the crisper drawer of your refrigerator. not sure what you mean by somewhat moist, but sometimes too must moisture on the leaves can cause them to wilt. a very light misting is enough.

greens from the farmer's market should be consumed within a week.
