I think you mean bean threads, otherwise known as long rice. They are clear when cooked. I eat them. A lot of people where I live eat them. The absorb broth and other flavors well. They are a decent alternative to grain products. Each person is different. It's a good idea to eat a variety of foods and listen to your body. I think other Asian noodles can be filling and comforting. Some are made of wheat, some of rice, and some of wheat and buckwheat combined. They are good in the right recipe. Since noodles are a flour-based product and many of them contain wheat, some people would not like to eat them exclusively because of concerns about consuming too much gluten or mucus-causing foods, but they are fine for most people as part of their diet, especially if they are not eaten cold.
