I actually have no idea what kind of bread you are doomed to eat in the UK, but if its GI is higher than the GI of toast, something is seriously f***** up with it...

Germans are quite averse to any form of national pride nowadays. Bread and beer are notable exeptions, though
In the UK, they actually bake bread leavened with soda instead of yeast or sourdough - probably to minimize the taste and to maximize the GI
