According to your data, it would seem that some parameters of CVD risk would improve (lesser risk) with lower carbs and higher fat, more similar to the keto/paleo/carnivore style diet.
Of course, the extremely low fat diet also has a lot of good results in improving heart health (Dr. Esselstyn).
I would speculate that extreme diets force the body to adapt and run more efficiently on the nutrients that are given - thus slowing the aging process. The diets in the middle of the macro-nutrient spectrum (balanced carbs, protein, fat) provide everything everyday and do not force the body to adapt or run more efficiently. Just a possible high level view.
No matter, aging damage accumulates with every diet. More sophisticated interventions are needed to reverse biological aging.

Definitely-my approach (at best) involves slowing aging rates, not reversing them
