Perhaps there could just be an "other" section and then somewhere for us to write our identities?

This is a good point you bring up, but of course with a future full of radical self-modification, the list could get rather large. Gender questions did serve ore of a purpose, it seems, in the past, but today it is probably not as relevant. Instead of a spectrum of human gender, maybe we could just have a "self-identification" question where you could enter a one or two word description. We could suggest "gender or other".
