Why might 1,000-2,000 mcg vitamin K2 MK-7 (not MK-4) per day be a bad idea? That is, I've read more than 200 mcg/day isn't recommended and that many take 200 mcg only 1-2x/week, but nothing said why.

Absolutely no idea how you came to that conclusion. Most studies looking for vascular benefits go up to 400mcg and that amount shows the most benefit. Higher doses to my knowledge haven't been subject of controlled studies but there is no reason to suspect harm.
